Greek Spaghetti Squash Salad
Welcome to recipe number two in this series of three creations using Primal Kitchen’s incredible dressings and mayo!
For years, salad dressings have been the number one hardest product to buy because it is very rare to find any at the store (including health food stores) that do not contain vegetable oil, canola oil, or soybean oil. Not to mention a host of preservatives and other questionable ingredients. I have been making homemade salad dressings for a while, but with life happening- it was very time consuming to make me own dressings that were not as simple as oil, vinegar, and mustard blended together.
This is why I am so excited about Primal Kitchens dressings! They taste absolutely amazing and are full of ingredients I would use on my own to make a gourmet dressing!
For this recipe, I use the Greek Vinegarette!
The ingredients in this Greek dressing are:
- avocado oil
- red wine vinegar
- organic apple cider vinegar
- sea salt
- organic black pepper
- organic oregano
- marjoram
- organic lemon juice
- organic oil of oregano
Perfection. It has saved me so much time and become my go-to salad dressing.
Fresh, summer time salads rank up there as one of my favorite things in this life. This Spaghetti Squash Salad the perfect meal that is great hot or cold, and stores well for leftovers!
Notes for Spaghetti Squash Salad
You can simply use this dressing alone for the salad- OR you can mix it with a high-quality mayo to give it a more creamy taste.
This is my favorite mayo because it is made with avocado oil and organic eggs!
Dressing
- 1/4 + 2 tablespoons greek dressing
- 2 tablespoons avocado oil or olive oil
- 4 tablespoons mayo
Blend all ingredients and enjoy!
* Can also mix in the mayo directly to the salad and then pour the dressing on.
Cooking Instructions
- Bake spaghetti squash and chicken.
- Mix all ingredients together in a big bowl.
- Simply toss with greek dressing.
- OR add a few tablespoons mayo and greek dressing to the salad and mix by hand.
- OR blend mayo with dressing and pour over salad.
It’s funny cause I think people believe that just cause we’re food bloggers means that we have all of the time in the world to cook dinner. I find myself scrambling every single night! These recipes are awesome and will be a total life-saver!
