Gluten Free Brownies!

Tis the baking season! A gluten free, grain free, dairy free, sugar free dessert almost sounds like an oxymoron. When I say I am making something that is free of all of that nonsense, most people smile nicely and assume it taste like cardboard. I may have a little different taste then most, but I do know you can create amazing treats that taste just as good if not better than any secret pleasure dessert you may have.

These go amazing with blender coconut milk ice cream!

With that said, these brownies are gluten free, grain free, dairy free, and refined sugar free 😉 Try them out and decide for yourself.

Plus, I have found a solution to my love of frosting: Coconut butter frosting: especially when sugar free. I seriously put it on everything, I mean everything. Or just eat it plain. Why not right?

Note: The coconut butter frosting is my favorite, but if you do not have coconut butter, you can take a can of coconut milk and turn it upside down and put it in the fridge for a couple of hours or over night. Then open and scrape the coconut cream that has risen to the top. Place that with some stevia and/or raw honey and whisk or bend with a hand bender.

For the coconut butter frosting:

  • Combine coconut butter, coconut milk and stevia or honey into a bowl.
  • Mix together and Add more coconut milk if needed.
  • Add to brownies once cooled.

Cooking Instructions

1. Preheat oven to 350.
2. Mix ingredients in a large bowl with a mixer or KitchenAid.
3. Pour in 4 x 8 loaf pan.
4. Bake for 20-25 minutes.

5. Let cool before eating, or place in fridge until cool (about 10 min).

6. Mix all frosting ingredients together and frost brownies after cooled.
