Baked Zucchini Chips go great with spaghetti squash salad, summer salad, or almond crusted salmon for a great summer dinner. 

Notes for Baked Zucchini Chips

  • To make cashew flour- simply grind cashews in blender or food processor until it forms into flour.
  • You can also use any gluten-free flour you have on hand.

Cooking Instructions

  1. Preheat oven to 450 deg.
  2. Slice Zucchini into thin slices 1/4″ -1/8″
  3. Mix Flour, salt, and Italian Seasoning in bowl
  4. Wisk egg in separate bowl
  5. Coat Zucchini slices in egg then dip in flour mixture
  6. Place on cookie sheet and bake for 8-10 minutes
  7. Flip and then add fresh grated cheese (optional)
  8. Bake 8-10 more mins or until crispy
