I pretty much think paleo pesto tastes good on everything, especially veggies. This is such a perfect side dish to any meal.

Quick tip: When basil is on sale or when you just have a bit of extra time, make a HUGE batch of pesto and then freeze what you do not use in an ice tray or baggie. That way, whenever you want an easy meal, throw that pesto on some meat, veggies, or gluten free pasta and you are good to go!

1. Chop veggies and heat pan with 1 large tablespoon coconut oil or butter.

2. Sate veggies until soft.

3. Make pesto by blending basil, pine nuts, garlic, olive oil, salt, cheese, and lemon juice.

4. Mix pesto in with veggie and heat for one minute.

5. Enjoy!
