Cauliflower rice is an amazing side to any dish! On days when you are looking for lower carb, and more veggies – this rice is your answer.
This rice is also perfect to make large batches and freeze leftovers in individual bags so you have a perfect side dish ready to go that will take less than five minutes to cook.
My favorite part is that you can make so many different variations- here I have included just the basic recipe- but feel fee to add any spices, veggies, herbs, onions- anything your heart desires!
Recipe Cooking Instructions
- Chop the cauliflower into large chunks and put into a blender (I use my blendtec)food processor. (If you don’t have a food processor continue to chop the cauliflower into tiny pieces.) Pulse the cauliflower until it is small and resembles rice.
- Freeze any leftovers if you are making in bulk.
- Heat the oil in a pan over medium heat until melted then add the cauliflower rice, salt, and pepper. Saute until tender- about 5 minutes.
