Cinnamon Sugar Plantains
I am currently living in Costa Rica, and currently obsessing over plantains.
Here in the jungle you can’t just run down the street to whole foods and pick up whatever the heck you want. There is a farmers market once a week- you get what they have, and make it last as long as possible.
This means I have to discover the hundreds of different ways to cook plantains.
Plantains are loaded with nutrients, and make a great replacement for any bread or grain in meals or snacks. Eat them as a side at dinner, a fast snack, or even as a yummy dessert.
There is just something about plantains fried in coconut oil that has me hooked. These babies are completely satisfying, delicious, and nourishing.
Cooking Instructions
1. Preheat oven to 375°
2. Combine the butter or coconut oil, sugar, honey, and cinnamon in a pan and heat until butter is melted.
3. Add plantain to pan and toss to coat.
4. On a parchment lined baking sheet, bake plantain for approximately 15 minutes or until it is nicely browned.
