Vanilla Healthy Cake Batter Pudding
Healthy Cake Batter… finally!
Confession time. The only reason I usually make cakes, cookies, and cupcakes, is to eat the batter. Sometimes I make the batter, and do not even end up baking anything.
This lovely creation allows me to have my cake batter, and eat it too. 😉
Soaked cashews are so versatile! They can make cream ‘cheese’, amazing creamy desserts, and can take on whatever flavor you want to give them.
Healthy Cake Batter
You can make this bowl your own in oh so many ways. Here are some possible twists you can do to switch it up:
1. Instead of a banana and coconut milk you can add 3 tablespoons coconut butter. LOVE this version!
2. Use maybe syrup, or stevia to sweeten instead of honey.
3. Top with fruit, or even a coconut oil chocolate drizzle.
Cooking Instructions
1. Soak Cashews for 1-2 hours (optional)
2. Add all of the ingredients into a food processor or high powered blender and Process until you have a smooth and creamy consistency.
3. Place the pudding in the refrigerator and chill for about 30 minutes or so. Add a dash of cinnamon and Enjoy!
