Almond Butter Cookies: Gluten free, diary free, sugar free, flour free. . . and yes, still taste amazing!

Most gluten free cookies do not have a texture of a cookie, or taste good like a cookie for that matter. These babies however will take that cookie craving, and satisfy it.

Some days I even like these cookies more without the chocolate chips, but that is up to you.

Notes on Almond Butter Cookies

When I do use chocolate chips, I use the brand ‘Enjoy Life’ because they are dairy, soy, and gluten free. Or, I use raw cacao nibs, because that is true, healthy chocolate that is good for the soul.

If budget is tight, you can substitute with any other nut butters. 🙂

These are my favorite chocolate chips because they are dairy and soy free, real quality dark chocolate!

This is also my favorite highest quality dark chocolate bar! High in antioxidants without a bitter taste. Use chocolate as medicine 😉

Cooking Instructions

  • 1. Pre-heat oven to 350 Degrees F.

2. In a bowl, whisk all ingredients (except the chips) together, then gently fold in chips to incorporate.

3. Spoon about 2 TBSP worth of batter onto the cookie sheet,

4. Bake for 8-10 minutes,  and let cool for another 10 minutes before touching to ensure they stay together.
